“It’s beginning to look a lot like Christmas…”, “It’s the most wonderful time of the year…” Just two of the many, many Christmas songs that you are most likely hearing on the radio and in the stores this time of year! However, when I hear the one about whiskers on kittens, and soft woolen mittens, it makes me think of a few of MY favorite things! Having one major thing in common with the girls of Miami, cheesecake pops to mind!
Yes, I love cheesecake! I also enjoy making cheesecakes! For several years, each Christmas, my Mom would ask me to supply the dessert for our family Christmas dinner, and she always requested my specialty; Chocolate Chip Cookie Dough Cheesecake! Yum!
Sophia, Dorothy, Blanche and Rose would often resort to pulling a cheesecake out of the freezer in times of need and crisis! Whenever something would go awry, or a major decision had to be made, the girls would sit down, many times in their night gowns in the middle of the night to talk and think things through. I remember often being impressed that their cheesecakes came from bakeries and were in nice pretty pink boxes.
I read in several different sources that The Golden Girls consumed over 100 cheesecakes during the taping of the show. Surprise of all surprises, Bea Aurther actually hated cheesecake! I personally don’t see how that could even be possible, but what an actress! To pretend to love something that much and actually eat it, while probably, most likely wishing she could spit it out!
With Christmas right around the corner and other holidays as well, I thought it would be fun to share my favorite cheesecake recipe with you! Chocolate Chip Cookie Dough Cheesecake
Crust: 1 ¾ cup crushed chocolate chip cookies or chocolate wafer crumbs
¼ cup sugar
1/3 cup butter or margarine, melted
Filling: 3 (8 oz packages) cream cheese, softened
1 cup sugar
1 cup sour cream
½ teaspoon vanilla extract
¼ cup butter or margarine, softened
¼ cup sugar
¼ cup packed brown sugar
1 Tablespoon water
1 teaspoon vanilla extract
½ cup all-purpose flour
1 ½ cup miniature semi-sweet chocolate chips, divided
In a small bowl, combine cookie crumbs and sugar; stir in butter. Press onto the bottom of a greased 9 inch spring form pan and 1 inch up the sides.
In a mixing bowl, beat cream cheese, and sugar until smooth. Add eggs; beat on low, just until combined. Add sour cream and vanilla; beat just until blended. Pour over crust; set aside.
In another mixing bowl, cream butter and sugars on medium speed for 3 minutes. Add water and vanilla. Gradually add flour. Stir in 1 cup of chocolate chips. Drop dough by teaspoonful over the filing, gently pushing dough below surface (dough should be completely covered by filling).
Bake at 350 degrees for 45-55 minutes or until center is almost set. Cool on wire rack for 10 minutes. Carefully run a knife around the edge of pan to loosen; cool 1 hour longer. Refrigerate overnight; remove sides of pan. Sprinkle with remaining chips.
Yields 12-14 servings!
